| Thanks to refractory dampers, you can easily regulate the temperature and have it in a lower mode for baking and cooking (150-150°C) or the higher mode for pizza and grilling (450-500°C). As if that wasn’t enough, you can also use the oven for cold smoking. |
| Marcel is fired with wood or pellets that are easily filled in the rear door. So you can easily add fuel during cooking if necessary. The oven can reach 500°C in just 20 minutes. |
| Marcel has a stainless steel outer frame, ceramic fiber insulation, a refractory brick baking stone, a thermometer and a window in the door. All of this means that it meets the requirements of a professional chef for a wood-fired oven and that it can be used in business. |
| The cooking surface is 33 x 37 cm. The entire chamber measures 52 x 34 cm and has a height of 20.5 cm. So you can easily fit a pizza (or two if it’s a calzone), a large levain or two baguettes. The oven can be self-cleaned by pyrolysis (+500°C) and brushed inside with a metal brush. |
